Ole Chicken Sweet Potato Fries

Ingredients

5 oz. Sweet Things® Seasoned RibCut® Fries (L0097)

1 green onion finely cut

1 oz. chopped cashews 

 

Café Rio Chicken

7-8 chicken breasts

12 oz. taco sauce (you can make your own using tomato sauce and a taco seasoning packet)

1 cup brown sugar

20 oz. cola (not diet)

 

Tomatillo Dressing

1 cup buttermilk

1 cup mayonnaise

1 chopped and seeded jalapeño

3-4 tomatillos, chopped

1 clove minced garlic

1 package buttermilk ranch salad dressing

1 tsp. lime juice

Directions

Café Rio Chicken
  1. Season chicken with salt and pepper. 
  2. Place chicken breasts in a slow cooker. 
  3. Add water to cover half the chicken. 
  4. Cook 12 hours on low.
  5. After 12 hours, pour out at least half the water and rain off fat. Add the rest of the ingredients and cook on low another six hours. 

Tomatillo Dressing 

  1. Blend all ingredients together in blender and chill.  

Plate Assembly

  1. Prepare the Sweet Things® RibCut Fries®, per manufacturer's directions. 
  2. Top immediately with chicken, dressing, onions and cashews.
