New England Lobster Sweet Potato Mash


5 oz. lobster tail

5 oz. Sweet Things® Original Mashed Sweet Potatoes (M0007)

3 oz. lobster bisque sauce 

3 ea. shaved celery strings

3 Tbsp. butter

1 Tbsp. lemon juice 

1 cup cream of mushrooms

1/2 cup chicken broth

1 tsp. lobster base

1 Tbsp. tomato bisque, canned


  1. Butterfly and broil lobster tail.
  2. Combine all of the ingredients and bring to a boil until thickened. 
  3. Remove from heat and rest. In a small sauce pan, melt the butter and add the lemon juice. 
  4. Place the lobster tail in the butter and coat completely.
  5. Using a 1.5 in. tall cylinder mold, create a column of mashed potatoes, ladle the bisque around it. 
  6. Top with the butter-broiled lobster tail and garnish with celery strings.
