SOURCING

The entire process is straight-forward. Whole potatoes are cut into fries, blanched to start the cooking process, dried to prepare for frying, fried to set the texture and color, and then frozen and packaged for shipment. Of course, the restaurant will fry them up one more time to make sure they are hot, crispy, and delicious!

Our largest base of operations is in the Pacific Northwest of the United States. Along with our own corporately managed farm, we partner with local farmers to contract potato growing. We also purchase potatoes on the open market.

We use a wide variety of potato varieties in our operations, to support year-round production of quality products. Some of these potato varieties include Alturas, Russett Burbank, Clearwater Russett, Ivory Russett, Ranger Russett, and Shepody.

Lamb Weston is a member of the Roundtable on Sustainable Palm Oil (RSPO) and 100% of the palm oil used to make Lamb Weston’s products is RSPO Certified Mass Balance. To learn more, please visit the Environmental, Social and Governance site (Environmental, Social and Governance Report pg. 59).

Nope, our fries are cut directly from a whole potato, no reshaping involved. About 70 years ago our Founder, Gib Lamb, helped create the cutting system that has become the industry standard in efficiently cutting those delicious fries quickly! ​

 Click here and follow your fries back to their roots by entering the first four digits of the production code on your bag or box (applies only to products made in the United States).

 A production code is an inkjet-printed code, normally near the top of the case, and allows you to access and review all production and quality records from the time the product was produced. You can even get information from the grower and field the potatoes were grown in! The first four digits of the code speak to which plant the product was produced at, the next six digits speak to the day, month, and year of production, and the following four digits provide information on the line, mode, hour, and minute.        There are two ways to submit a sample request. You can fill out an inquiry form and note what products you would like. Or, you can visit a product page and click the “Request a sample” button.​

We do have fries that can be baked in conventional ovens and convection ovens.

ALLERGENS

Allergen information can be found on individual product pages within the nutrition tab.  Allergens may be listed within the list of ingredients in parentheses immediately following the ingredient containing the allergen or in a “CONTAINS” statement on the first line immediately following the ingredient statement.​

For questions on final preparation, check with your local restaurant to see how the fries are being prepared back of house.

Lamb Weston does not add any gluten to its classic, uncoated fries. However, we do process gluten within our facilities, which is why our frozen fries are not gluten free certified. When wheat is included in an individual product recipe, it is listed in the “CONTAINS” statement following the ingredient statement found on the website page and product packaging.​

The FDA does not consider pea starch a major food allergen. Lamb Weston uses pea starch as an Upcycled Certified ingredient in the batter recipes for some of its Extra Crispy products.

INGREDIENTS/CERTIFICATIONS

Halal certified products are approved by a halal certifying body (HCB) as permitted or acceptable in accordance with Islamic law. Halal status is determined by the HCB and approved products are allowed to display the HCB’s halal symbol on the product label. Lamb Weston relies on a reputable HCB for all halal product claims. Halal foods do not contain alcohol or pork, and all other foods must conform to specific requirements to be considered halal. To find our products that have been halal certified, click here.

Kosher certified products are approved by a kosher certification agency (KCA) as proper or acceptable for consumption in accordance with Jewish dietary law. Kosher status is determined by the KCA and approved products are allowed to display the KCA’s kosher symbol on the product label. Kosher foods do not contain pork, and all other foods must conform to specific requirements to be considered kosher. Lamb Weston relies on reputable KCAs for all kosher product claims.

Products may be either “kosher pareve” (neutral) or “kosher dairy”. Jewish consumers that keep kosher separate milk and meat products and do not consume them together at a meal. However, kosher neutral products can be consumed with either milk or meat products at mealtime. In certain cases, a product will be certified as kosher dairy if it is produced on a line considered to have “dairy status” under Jewish law, even though the product may not contain any dairy ingredients in the formulation. If a potato tuber becomes uncovered from the soil during the growing process, it can become exposed to the sunlight. With prolonged exposure to sunlight, the tuber will turn green where that exposure occurs.​

The following are the most common ways a tuber can become uncovered: ​

It grows up out of the dirt

Soil erodes away from the tuber (caused by the wind, rain, or over-irrigation) ​

The ingredient statements listed on our product cases and website product pages are stated in order of predominance from the largest ingredient found by percent weight to the smallest. If there are allergens present in the product, it will be listed immediately following the list of ingredients.

Nutrition information can be found on each individual product page under the "Nutrition & Cooking Methods" tab. This nutrition information is published in accordance with the FDA’s updated requirements for Nutrition Facts labels (2016).

Lamb Weston’s domestically (U.S.) distributed products fall under FDA jurisdiction. The Nutrition Facts labels for those products include the nutrients mandated by the FDA in its updated requirements for Nutrition Facts labels (2016). Per current FDA regulations, the mandated nutrients include the following: Calories; Total Fat; Saturated Fat; Trans Fat; Cholesterol; Sodium; Total Carbohydrates; Dietary Fiber; Total Sugars; Added Sugars; Protein; Vitamin D; Calcium, Iron, and Potassium.

The Nutrition Facts labels on the Lamb Weston website are in the standard FDA format which includes the serving size and the number of servings per container. The nutrient values contained in a Nutrition Facts label are developed through the analysis of the commercialized product. After that, these nutrient values are adjusted in accordance with the serving size and then rounded per the FDA’s rounding rules.

Lamb Weston completes its analytical testing for nutrient values (as required by the FDA) on "as sold" products, not "as prepared" products.
