Yukon Selects with Red Pepper Coulis

Lamb Weston Lamb's Seasoned® Yukon Selects® Concertinas® (Y1004)

1/3 lb. butter

5 Tbsp. chopped garlic

1 cup tomato paste

5 3/4 lbs. roasted red peppers

1/4 cup parmesan cheese

1 tsp. granulated garlic

1 tsp. onion powder

1 tsp. crushed red pepper

1/2 tsp. ground white pepper

1/2 cup balsamic vinegar 

  1. Melt the butter, add the garlic and heat. 
  2. Add in the tomato paste and heat. 
  3. Add in all remaining ingredients except the vinegar and cream. 
  4. Simmer for 3 minutes.  
  5. Add vinegar and cream. 
  6. Remove from heat, cool. 
  7. Serve with Lamb Weston Lamb's Seasoned® Yukon Selects® Concertinas® (Y1004).
