It’s Harvest Time

Potatoes are what we do — why that matters during harvest season

At Lamb Weston, we don’t just grow potatoes — we live them. We’re the only major fry company that’s truly focused on potatoes. That singular focus means deeper expertise, greater consistency, and a relentless commitment to quality. Because premium fries start with premium potatoes.

Grown Where Potatoes Thrive

We grow in five regions across North America, but two-thirds of our potatoes come from one of the most productive agricultural regions in the world: the Columbia River Basin. With its sandy soil, long sun-filled days, cool nights, and precision irrigation, this region produces potatoes of unmatched quality.

Our agronomists and farmers are constantly innovating — selecting varieties that are more heat-tolerant, pest-resistant, water-efficient, and cost-effective. Our varietal development program takes up to 10 years to perfect a new potato variety, ensuring only the best make it to your plate.

A Reliable Supply, Rooted in Science

While we can’t control the weather, we take every step possible to ensure a dependable raw supply. Our Agronomy team works together with growers to monitor and manage every stage of the growing process. Want to hear more? Check out these podcast episodes:

Precision from Field to Fry

Before a potato becomes a fry, our production teams use data to blend the perfect mix to meet each product’s unique specifications. Every field is tested at least five times for key attributes like size, shape, specific gravity, defect levels, and color. That data drives every decision.

Once harvested, potatoes are sorted by storage potential — short, immediate, or long-term. Throughout storage, we sample monthly to catch any undesirable traits early. Storing potatoes is a science, and with 75 years of experience, we’ve mastered it.

Quality You Can Taste

Our top-selling SKUs are tested, evaluated, and quality-checked over 15,000 times a year before they ever reach a customer’s plate. That’s not just quality control — that’s Our Premium Promise.
