Croque Madame with Olive Oil Crinkle Fries

The perfect brunch Croque Madame served alongside Lamb Weston Olive Oil Crinkle Cut Fries

Ingredients

Ingredients:

6 oz Lamb Weston® Olive Oil Crinkle Cut Fries

3 Tbsp Butter

2 Tbsp Flour

2-quart Milk

6 oz Shredded Mozzarella

6 oz Shredded White Cheddar

1 Tbsp Dijon Mustard

2 Slices Sourdough Bread

4 Slices Ham

2 Slices Gruyere

1 Egg, Sunny-Side-Up

Directions

  1. To make the sauce, start by melting 2 Tbsp of butter. Once melted, add flour and cook for 2 minutes. Slowly whisk in the milk followed by the cheese and mustard. Stir continuously over medium heat until sauce has thickened and cheese has melted.
  2. Build the sandwich, and toast over medium heat until gruyere has melted.
  3. Cook fries to manufacturers specifications.

Top sandwich with sauce and the egg, serve alongside Olive Oil fries.
