Kimchi Queso

Creamy, kimchi queso meets crispy fries for an easy, crave‑worthy mashup with a little kick. 

Ingredients

Lamb Weston® Crispy On Delivery™ 3/8” Regular Cut Skin On (LW201)

1 tbsp Butter  

1 Jalapeno, small dice  

3 cloves Garlic  

2 cups Kimchi  

1 tbsp Cumin 

1 tbsp Onion powder  

1 tbsp Pepper   

2 tbsp Gochujang  

8 oz Cream cheese 

2 cups Mozzarella  

2 cups Sharp cheddar  

12 oz Milk  

1 Jalapeno, sliced for garnish  

1 bunch Cilantro for garnish  

Directions

  1. In medium pot melt butter, add jalapeno, garlic, spices and kimchi. Sautee until garlic and jalapeno are softened.   
  2. Add cream cheese and stir constantly until it is incorporated into the veggie mixture.   
  3.  Whisk in milk.  
  4. A few handfuls at a time whisk in shredded cheeses until melted and smooth.  
  5. Add gochujang- add more if desired.   
  6. Simmer 5 minutes until everything is well incorporated.  
  7. Cook fries to manufacturer’s specifications.  
  8. Top fries with queso, cilantro and jalapeno.
